Our Grillo white wine is locally sourced from naturally cultivated grapes. The Grillo grape variety is a local sicilian grape, and can't be found cultivated anywhere else.

Production Area: Hills of Santa Ninfa area
Processing: Light cryomaceration at temperature of 7-8°C/ 44°F- 46°F followed by fermentation in steel tanks of 300 hl at controlled temperature of 18-20°C/ 64°F-68°F.
Color: Straw yellow
Organoleptic characteristics: floral aroma with good minerality
Pairings: Ideal with fish dishes and sashimi (raw fish dishes). Pairs great also with fresh cheeses
